Yesterday, I had a craving for chocolate and sugar. I hadn’t had chocolate in a while, despite having ingredients in the house, so I took some time in the morning to make my favourite muffin recipe. Chocolate chocolate chip muffins. Because it’s not enough to just have chocolate chips… 😉
I use the recipe from the Food Network, found here, with a few minor changes due to dietary restrictions.
Instead of all-purpose flour, I use Bob’s Red Mill Gluten Free 1-to-1 Baking Flour. I really enjoy how it makes muffins and cookies turn out, and it acts much like the wheat-filled all-purpose flour. The other change I make is using lactose-free milk. Minor changes overall.
(Being gluten and lactose intolerant is awesome*.)
*Not actually awesome. At all.
